It's been a long time coming, and I am not sure if I can keep up with this, but I am going to start sharing some of my cooking secrets.
I have always been a great cook but now that I have been having dinner parties the feedback is unbelievable!
Then I started sharing some of my recipes and my friends husbands are texting me saying "Thank you!"
I use the word "recipe" lightly.
I mostly just add what I have or what I feel for.
I have learnt to cook a lot of things by guessing what the ingredients some of my favorite dishes from restaurants are, and it usually comes out even better!
Also, Jamaicans don't follow recipes. We throw in what we find in the fridge.
First thing to know about cooking... freshness.
The more fresh fruits and vegetables, the better the flavor and the better it is for your body.
I remember when I used to send John to the grocery store for something like shrimp or herbs and he would come home with herbs in a bottle and cocktail shrimp! He has come a long way since then.
This time around I just have the before and after photos of my ceviche dish.
My friends have requested I do more of a step by step with the photos, I will try next time!
I am a messy passionate cook so it will be difficult!
Shrimp Ceviche-
I start with all the vegetables and fruit I need.
I basically add more of what I like, less of what I don't, if I feel like having it spicy I add more jalepeno.
If you don't like something you don't have to add it. Other ingredients used in ceviche is cucumber, green peppers and even carrots. It is mostly about what you like.
Add the vegetables to chopped up shrimp (you can use fish if you prefer) and squeeze the orange and lime juice over it and mix it so that the all the shrimp has some juice on it.
This is important because it is the acid in from the fruit that cooks the shrimp.
Some people say leave it in the fridge for an hour, I left this in for 5 hours. I basically just wait for the shrimp to be a little firm, that's how I know it is cooked.
I eat it with lightly salted chips.
