Grilled Steak with Mushroom Wine Sauce and Crab Stuffed Potatoes

Treated the family to the typical home cooked meal, but this time I took pictures to share my "recipes" with you guys!
The pictures will show you the ingredients.

Grilled Steak:
Just so you know,  I buy my thyme fresh and leave it in a dish on the counter to dry.
Also at the end added some dried parsley.
I usually don't buy steak sauce but because all my seasonings are still being shipped from Dubai I bought a local sauce.
Instead, or in addition to a steak sauce you can use soy sauce, worcestershire sauce, or goya marinade.
I marinated the steak for about 6 hours in the fridge then Hubby grilled it to medium rare perfection!



Twice Baked Crab Potatoes:
I always feel like potatoes take forever to bake so I always bake them long before I am ready to prepare dinner.
Bake until soft then leave to cool.
Cut around the top of the potatoes as you will see in the pictures and carefully use a spoon to scoop out the inside.
Mix the potatoes with butter, milk, salt, sour cream(if you have it), crab and cheese.  (I normally break the crab up into pieces first.
Mix it all together then stuff it back into the potato skin, sprinkle a little cheese on top and put back in the oven to reheat.  Done!




Mushroom Wine Sauce:

Put a stick of butter in a pan on medium heat.
Once it has melted add all but water and flour.
Sautee, add a little red wine then add some flour for thickening.
When it gets really thick add water slowly and keep stirring.  Do this until it has a nice creamy consistency. It's that simple and so yummy!

No Rest For The Weary

Yesterday was sweet and sad, and maybe a bit boring. Amalia woke up with a fever and insisted on sleeping right on top of me on and off all day. Even though she was sick, and I did feel a bit cruel and selfish, I pulled out my camera and got to clicking. I simply won't give her a break! But it was worth it.   Look how sweet and peaceful she looked only an hour before she threw up on me. She is the prettiest little girl and oh so sweet.   I love photographing her. She still has a bit of a temperature today so it seems I am back on "pamper the baby even more than normal" duty. My job is to lay on the couch and be her bed, her comfort, and anything else she may need. And today I will give her a break from her modeling duties. I have the best job in the world. I love my kids.

Long Awaited

Ethan has had the typical "little brother" problems. A huge one being that he has been going to all Kaidens scouting activities for 2 years and couldn't participate. Being the observer of your bigger brother having fun... not so much fun. Then we had the move to Dubai, so what should've been his first year, wasn't. He was so excited and was all smiles at his very first scouting event where he could participate! I can't get over how cute and official he looked in his uniform. He took every belt loop he earned extremely seriously. It's also weird to see Kaiden in his webelo uniform, I always saw it as for the "bigger boys". I guess my little Kaiden is one of the big boys now.
